Vitality Salad: Serves 4
Seed Mix – Pickled Mango – Balsamic Vinaigrette

Vitality Seed Mix
1/2 cup toasted pumpkin seeds
1/2 cup toasted sunflower seeds
1/3 cup toasted hemp seeds
2/3 cup sprouted fried quinoa
2 pinches salt

Toast seeds on a baking sheet until lightly toasted. Fry sprouted quinoa in a saute pan until crispy. Cool on a   sheet pan. Mix together.

Pickled Mango
1 Mango
Balsamic Vinegar

Cut mango in 1/4” cubes. Soak in vinegar overnight. Drain vinegar. Quick rinse mangos

White BalsamicVinaigrette
1/2 cup white balsamic vinegar
1/2 cup olive oil
1 teaspoon basil – chopped finely
1 teaspoon oregano – chopped finely
1/2 teaspoon garlic – minced
1/2 teaspoon shallot – minced
1/2 teaspoon salt
1/3 teaspoon black pepper

In food processor, blend garlic, shallots, herbs, salt & pepper with the vinegar. Once combined, slowly drizzle in the olive oil until incorporated. Then pour faster.

Salad Preparation
Add Vitality Seed Mix and Pickled Mangos to your favorite salad greens mix. Add Vinaigrette.
