Sweet Potato Ravioli

Sweet Potato Filling Ingredients

¼ lb. whole unsalted butter
½ gal (6-8) roasted then peeled sweet potatoes
½ cup roasted poblanos – peeled and seeded
2T packed fresh thyme – chopped
5T packed fresh sage – chopped
1T Kosher Salt

In a large pot or roasting pan over medium to high heat, melt and lightly brown the butter. Stir in sweet potatoes and poblanos and cook until hot throughout. Add herbs and seasonings and mix well. Season to taste with salt and pepper. Pass through ricer.

Instructions:

  1. Spoon sweet potato mix (see ingredients below) into your favorite pasta recipe or store bought sheets.
  2. Poach raviolis and serve with
    1. Chopped organic lettuce mix with Gorgonzola cheese, Parmesan cheese and toasted walnuts. Toss in sherry vinaigrette (see ingredients below)

Sherry Vinaigrette ingredients

1 shallot
1/3 cup 30 year aged sherry vinegar
½ t salt
1 pinch ground black pepper
1/3 t fresh thyme
1/3 t fresh garlic chopped

1 cup olive oil

Put above ingredients in a blender. With blender running, pour in 1 cup olive oil slowly to emulsify.
