Grilled Heluka Pork Chop
Grilled Heluka Pork Chop – Serves 4 -8
Great with Pork Chops, Boneless Pork Chops, & Pork Tenderloin
Step 1: Create the Pork Brine (for 8 portions)
Ingredients for Brine
1 gallon water
1/3c brown sugar (packed)
2T Juniper Berries – crushed
2T garlic cloves crushed
1 Bunch sage – torn by hand
Combine above ingredients and mix together
Soak Pork in Brine for 2 hours
Step 2: Make Strawberry Chamomile Sauce
Ingredients for sauce
½ pound (or pint) of strawberries (tops removed) – pureed and seeds removed. Should have 2 cups puree
¼c chamomile buds
¼T lemon juice
Pinch of salt
Bring water and honey to boil – pull off heat and stir in chamomile. Let steep for 15 minutes then strain.
Stir in strawberry puree, lemon juice, and salt
Thicken with arrow root slurry
Step 3: Drizzle sauce over pork and around plate and serve.
Optional: Prepared dish is served with broccolini and mashed potatoes.

I am stingy with my 5 stars …… no so here. Fresh, fresh, fresh. I went with two people the first night and 5 the second night (the original other two went back with me a swell). No one was disappointed. I can’t wait to get back to Vail for another meal there.
