Cobia with Banana Sweet Potato Puree and Greens

Sweet Potato Puree

2 ea. Whole sweet potatoes peeled and cubed. Boil in water until soft
1 ea. Banana (keep peel on). Roast in oven at 350 F for 30 minutes.
1T juiced ginger or finely grated ginger
Salt & Pepper to taste

Remove banana peel and then mix all ingredients together in mixer to mashed potato consistency.

Cobia Rub
Equal parts ground porcini powder and ground chile Caribe (1T + 1T)
Add salt & pepper to taste. – Rub on Cobia and then sauté

Sautéed garlic and spinach. Salt & Pepper to taste
