4lbs bacon cut into 1″ pieces
4 Yellow onions diced
1 Cup packed brown sugar
1/2 Cup minced garlic
1t Cayenne pepper
1t Cinnamon
1t Nutmeg
1 Cup Maker’s Mark Whiskey
1 Cup sherry vinegar
1 Cup maple syrup


1) Cook bacon until 50% brown
2) Drain all but 1/4 fat
3) Add onion and garlic and cook until translucent
4) Add brown sugar and cook until it caramelizes
5) Add cayenne, cinnamon, and nutmeg
6) Add liquids and reduce for 35 minutes or until thick
7) Cool and pulse in blender
