Scallops with Bacon Jam

4lbs bacon cut into 1″ pieces
4 Yellow onions diced
1 Cup packed brown sugar
1/2 Cup minced garlic
1t Cayenne pepper
1t Cinnamon
1t Nutmeg
1 Cup Maker’s Mark Whiskey
1 Cup sherry vinegar
1 Cup maple syrup


1) Cook bacon until 50% brown
2) Drain all but 1/4 fat
3) Add onion and garlic and cook until translucent
4) Add brown sugar and cook until it caramelizes
5) Add cayenne, cinnamon, and nutmeg
6) Add liquids and reduce for 35 minutes or until thick
7) Cool and pulse in blender

Eggs & Bacon Appetizer

Deviled Eggs & Bacon – 12 eggs

Step 1: Create the beet pickled eggs

Hard boiled eggs peeled
1 c sugar
1 c apple cider vinegar
1 c water
½ beet peeled and sliced thin

Mix sugar, vinegar, water and beets together. Submerge eggs in mixture for 20 minutes or until desired color. Slice eggs in half and remove yolks

Step 2: Create the mix for eggs

Cooked yolks from pickled eggs
6 oz mayo
1 T Dijon
1 pinch cayenne pepper
¼ t lemon juice
1 pinch yellow ground mustard
1 pinch paprika
salt & pepper to taste

Mix above ingredients together and spoon mixture back in to pickled egg halves

Top with cooked bacon crumbles
